Soon it’ll be time to say goodbye to this beloved fruit and so my mum pickled the last of raw Alphonsos we had to make them last just a little longer. Diced and salted mangoes mixed in typical Konkani masala consisting of loads of garlic, chillies, mustard, jeera and other spices.
The aroma instantly transported me to those numerous childhood summer vacations in Kokan when grandmum would fill in jars and jars of Loncha (pickle) and Ambusti ( dried mango) while the mangoes were still raw. Traditionally it is made from a special variety of mangoes – the Loncham Aambo meant specifically for pickling. We used Alphonso as it was easily available.

PS: I have already eaten a week’s worth of pickle while it was still being made. Tastes best fresh!
