Konkani Muslim Saravle (heirloom pasta) was our Eid special dinner tonight. Its a time to count our blessings. And I did as I cooked today.
I first learned about Saravle from @mamukadam
and @thebombayglutton a few years ago. Recently Mohsina Maam gifted me a packet. Had planned to use it in this lockdown and Eid seemed perfect. Its typically made sweet, but I found a savoury recipe browsing through this set of unassuming Muslim cookbooks my friend Vikram Doctor had given me. Some research and asking around later I got many different recipes. So I sort of picked up primary elements from them all and here’s my final dish. – Instead of cooking the saravle with the chicken (I’d not cooked it before and didn’t want to overcook it) I split the recipe into two elements. I cooked the saravle in a subtly spiced base of coconut milk. And using the same spice mixes but adding a hefty dose of green chilli I topped the silky pasta with a spicy green chilli chicken khurchan type dish. Served it up to kuds witb the story of the Konkani Muslim community, Saravle history and more…
